Sur un livret de Picander, la Cantate du café de Bach est certainement l’une des pages les plus connues consacrées à un breuvage qui faisait alors fureur dans l’Europe de l’époque. Si elle n’appartient pas à proprement parler au genre de l’opéra, son humour et ses ressources comiques, voire bouffes, en font un objet propice à un travail sur scène. Avec la chorégraphe Ambra Senatore, Jérôme Corréas et son ensemble Les Paladins ont voulu, sans renier le sourire et l’ironie, replacer les péripéties humoristiques de la jeune Lisette, que son père espère arracher à son addiction en la mariant, dans une histoire musicale du café, revers léger, domestique et féminin du mouvement vers l’autonomie de l’individu porté par les Lumières. À la pièce de Bach répondent une page homonyme de Nicolas Bernier, contemporain français qui s’était, comme le Cantor de Leipzig, illustré dans le répertoire religieux, ainsi que de la musique de table de Telemann et des airs à boire.
