Encatation s’inscrit dans le sillage du vaste projet de recherche intitulé Attraction, que Johann Le Guillerm mène et recycle depuis presque une vingtaine d’années, en adepte d’une « mathématique d’intuition », et qu’il définit comme « une utopie, l’affirmation que le monde peut être réélaboré par soi-même pour ne pas le subir mais mieux l’éprouver, le penser, le vivre. » Ici pas de scène, pas de gradin, mais une table prévue pour une soixantaine de happy few qui serpente autour de postes de travail servant à la préparation d’un menu hors du commun. Lumières tamisées, sons étranges, ustensiles surprenants, officiants efficaces et discrets : nous ne sommes pas ici spectateurs, mais plutôt convives d’une expérience inédite, d’un rituel sensoriel et culinaire minutieusement orchestré. Adieu verres, couverts et assiettes, bien trop conventionnels pour ce cérémonial qui s’écarte du prêt-à-consommer comme du prêt-à-penser. Place à d’autres moyens, d’autres mots, d’autres manières de cuisiner et d’ingérer, qui tiennent compte du goût mais aussi de certaines spécificités… mécaniques. À découvrir aussi Le Pas Grand Chose, une conférence-spectacle très subjective sur le point, ce « pas grand chose qui n’est pas rien », où Johann Le Guillerm prend la parole, et comme toujours surprend et déplace notre regard.
